With a mandolin we will cut the previously peeled yucca. Fry it in sunflower oil at 170 degrees and then add a little bit of salt, before letting it on absorbent paper for a while.

Season the peppers and bake for 40 minutes in the oven at 180 degrees. Wait for it to cool down, peel it and cut it into strips.

Fort he Apple purée:
– 2 green apples in quarters
– A little bit of sugar
– Cinnamon

Put he 2 green apples (already in quarters) in a bowl, add one tablespoon of sugar and a little bit of cinnamon. We will mix it a little bit and then cook it in the microwave for about 4 minutes before crushing it.

For the tuna:
– 130 gr of tuna

We cut the piece of tuna into slices. We cook it in the pan for only a couple minutes, leaving it red inside.
To prepare the dish, we will first put some Apple purée as a base. On it the coca with the roasted pepper and the tuna slices and add some yucca chips on the side.
